I was introduced to vegan food by AJ, Hullquist and got to experience Mrs. Hullquist, Eriann's cooking firsthand. This is a great book, the foods are easy to cook and appetizing.
If you buy this book, you will love the food even if you're not vegan.

Before I married Eriann, I ate the majority of my meals in restaurants. By contrast, she had been immersed in a culture of preventive health that had a major emphasis of not eating anything that could not be digested easily within 5-6 hours. Our eating habits and tastes clashed tremendously.
However, now I would much rather eat at home; and I am delighted to invite friends and clients home for a meal. We enjoy an abundance and variety that I feel is far superior to anything that I have had in the past. And those items that I have given up have been replaced by something better.
