My vegetarian experience began when I met my husband Ron 10 years ago. I was raised on meat and dairy products with a mixture of some vegetarian dishes and meat analogs (imitation meat products made of soy). I enjoyed helping out with various cooking schools from about age 10 onwards. Even then, the food I helped teach, did not inspire me to change my own diet. My husband was raised lacto-vegetarian, so I agreed to going off the meat would be okay as long as I was able to enjoy my cheese, milk and eggs. It was then I began to realize the difference of a vegetarian lifestyle. Occasionally I would crave some chicken and would weaken to have a piece. Each time I would become very sick for about 24 hours. I could not believe how heavy the meat was on my stomach and how it interferes with the digestion process. It was then that I made up my mind I was going to change for me, and began to research along with my husband further into the health of dairy products. At this time I was pregnant and not only did my health matter, but I was responsible for another life as well. Again the knowledge obtained from the research we gathered led us to omit eggs and all dairy products. I never imagined the day I would make this lifestyle change! The recipe search was on! I learned to supplement some of the ingredients in my previous recipes. They are able to remain family favorites, only healthier. At this point I wanted to teach others what I had learned and began to teach cooking classes in my home.

The excitement of watching people change their lifestyle, lose weight and correct various health problems inspired my husband and I to dedicate our lives to God and His health message.

The joy and excitement of working with people led me to obtain my degrees as a Registered Nutritional Consultant. As my time becomes more limited, I hope this cookbook will reach those I personally cannot have contact with and it will change their lives in the way these recipes changed my family's and my life. May you experience the same joy as you delight in the great taste and smell of cooking nutritionally.
